Purifine LM
Phospholipase A2 for Lecithin Modification
Purifine® LM has been developed for lecithin modification to produce enzymatic hydrolyzed lecithin. Purifine® LM converts phospholipids in crude lecithin as well as wet gums to lyso-phospholipids. Purifine® LM hydrolyzes all four phospholipids namely, phosphatidic acid (PA), phosphatidylcholine (PC), phosphatidylethanolamine (PE), and phosphatidylinositol (PI).
As a result of lecithin hydrolysis, lyso-lecithin is formed which has excellent oil-in-water emulsification capacity, improved water dispersibility, higher heat resistance, while keeping the nutritional characteristics of the lecithin.
Benefits
• Lyso-lecithin production without chemical addition
• Hydrolysis of all phospholipid types
• Minimized glycerophosphate formation
• Hydrolyzed lecithin is an excellent oil-in-water emulsifier
