Phospholipase A2 for Enzymatic Degumming

Purifine® LM is a robust and thermostable enzyme that can be utilized directly in a water degumming process, with no (or minor) modifications. It is active at neutral pH and temperatures from 40 up to 80°C, meaning no pH adjustment, high shear mixing, or cooling of oil is required.
The results of the hydrolysis action of Purifine LM are lyso-phospholipids and FFA. As lyso-phospholipids are more hydrophilic than intact phospholipids, less oil is entrapped in gums, reducing gum volume and increasing oil recovery. Gums may also become easier to separate during centrifugation.

Phospholipase A2 for Lecithin Modification

Purifine® LM has been developed for lecithin modification to produce enzymatic hydrolyzed lecithin. Purifine® LM converts phospholipids in crude lecithin as well as wet gums to lyso-phospholipids. Purifine® LM hydrolyzes all four phospholipids namely, phosphatidic acid (PA), phosphatidylcholine (PC), phosphatidylethanolamine (PE), and phosphatidylinositol (PI).
As a result of lecithin hydrolysis, lyso-lecithin is formed which has excellent oil-in-water emulsification capacity, improved water dispersibility, higher heat resistance, while keeping the nutritional characteristics of the lecithin.
