β-Carotene (beta-carotene) is a natural powerfully colored red-orange colorant agent rich in plants and fruits. It is recognized as a member of the carotenes which they are in the category of terpenoids (isoprenoids). Among the carotenes, β-carotene is characterized by having beta-rings at both ends of the molecule.
Since plant carotenoids are distinguished as the main nutritional source of provitamin A, then β-carotene is renowned as a provitamin A carotenoid.
β-carotene is principally applied as a colorant in food and beverage because of its wide color ranging from light orange to red, such as ice cream, biscuit, edible oil, beverage and etc. Moreover, it has got the E number E160a as a food coloring as well.
